Recipe for Buffalo Chicken Dip

Ingredients:

  • 3 (approx 20 oz) Chicken Breasts boiled, baked, grilled, however you want to cook them
  • 2 8 0z pkgs cream cheese, softened (you can use 1/3 fat)
  • 1 cup Ranch or Blue Cheese Dressing (or 1/2 C each, use light or whatever you like best)
  • 3/4 cup Franks Red Hot Wings Sauce (or any other hot sauce you prefer)
  • 1 12 oz bag shredded cheese (use co-jack, cheddar, whatever your preference)
  • Directions:

    Makes a 1/2 crock pot or a 8x8 pan. For large crowd, double recipe for full crock pot or use 9x13 pan)

    Shred cooked chicken & mix with Hot Sauce in large skillet. Heat through on medium heat. Add cream cheese & dressing (ranch or blue cheese). Cook, stirring until well blended, & warm. Add 1/2 of cheese (6 ozs) & transfer mixture into crock pot or pan.

    Cover with remaining cheese. In crock pot cook on low til hot & bubbly. In pan bake in 350 oven for 25 minutes.

    Serve with Chicken in a Bisket crackers, celery sticks, Tostito Scoops, or whatever you like.

    You can use rotisserie chicken to save time. This is a weird color, but tastes great! I made it Saturday, it went quick. I use Marie's Lite Blue Cheese dressing & 1/3 fat cream cheese. The kids liked celery with it, I liked the Chicken in a Bisket crackers, everyone else liked Scoops. It has a little bite from the hot sauce, but even the kids inhaled it!!

    my friend brought this to my party on Saturday and I like it, although she makes it on the hot side, with what was left over, I stirred in sour cream and it re-heated up well. She also saves time and uses the canned chicken, she buys the large ones at Costco. I served it with the home made chips from the local authentic Mexican resturant
