Recipe for Chicken Riggies

Ingredients:

  • 1 Lb boneless chicken
  • 1 lb rigatoni
  • 1 onion
  • 1 green pepper
  • 1 red pepper
  • 5 hot cherry peppers
  • 1/2 cup white wine
  • 12 oz mushrooms
  • 2 cloves crushed garlic
  • 1/4 cup romano cheese
  • 1/4 cup parmesean cheese
  • 1/4 pint heavy cream
  • 17.5 on roasted peppers
  • 1 stick butter
  • 28 oz can tomato sauce
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp basil
  • 1 tsp italian seasoning
  • 2 tsp parsley
  • Directions:

    Cut up chicken into small pieces & roll in flour. Brown in 1/2 stick butter, set aside.

    Cut up onions, peppers, garlic, hot peppers, mushrooms, roasted peppers. Saute in 1/2 stick butter until tender.

    Add chicken, wine, tomato sauce. Simmer about 15 minutes.

    Add salt, pepper, basil, italian seasoning, and parsley.

    Add heavy cream & cheeses.

    Bring to a boil for 10 minutes.

    Pour over cooked rigatoni.
