Recipe for Potato Candy

Ingredients:

1 medium-sized potato - peeled, cubed, boiled

small amount margarine

dash of salt

1 tsp vanilla

1.5 Lb confectioner sugar

Peanut butter (see below)

Directions:

Mash together potato, maragine, salt, vanilla

Mix in confectioner sugar until you have a stiff dough

Sprinkle confectioner sugar over waxe paper

Roll dough thin into a rectangular, keep sugar on rolling pin

Spread with 1/4" peanut butter

Roll by wax paper like a jelly roll

Put in refrigerator for a couple of hours until chilled

Slice and serve
