Recipe for Rum Cake (Nanny's recipe)

Ingredients:

  • Cake:
  • 1 yellow cake mix, pillsbury w/ pudding
  • 3 eggs
  • 1/3 cup vegetable oil
  • 1/2 cup cold water
  • 1/2 cup 80-proof rum
  • Glaze:
  • 1/2 cup butter
  • 1/4 cup 80-proof rum
  • 1/4 cup water
  • 1 cup sugar
  • Directions:

    Cake:

    Preheat oven to 325

    Grease and flour pan

    Mix cake ingredients, blend 2 minutes

    Bake 1 hour, cool, invert cake

    Glaze:

    Melt butter, stir in water and sugar.

    Boil 5 minutes, stirring constantly

    Remove from hear, stir in rum

    Poke holes in cake, spoon on glaze, let absorb

    ** May try adding rum while mixing glase to crystalize

    ** If cake mix has no pudding in the mix, use 4 eggs (vs 3), 1/4 cup oil (vs 1/3), and 1 small vanilla pudding
